Anything on the "Song Pilot" album by Dwayne O'Brien. Ed Kilbourne's "Cloudbase" CD about flying gliders (he has another CD of flying music but I've never heard it). Lenny Kravitz' Fly Away. A few other good songs already mentioned.
My favorite is not so Pithy as the above but I love it none-the-less.
The opening melody/song has hung with me for all these years. I don't know why.

Not sure if its about flying, it probably isn't, but some of the lyrics sound like it, "higher into the air." Plus it's one of those songs that's both relaxed and intense at the same time, makes me think of flying.
