I'm building my second plane...
First thing "I" build are the Wings...
They can be put out of the way easy... Can't be said for the fuselage.
It's like the elephant in the room , go around.

One thing I've never needed was a Building table... talk about an elephant in the room.
I build on Horses....level to each other.... I slide tables under it...
Once the wings are built.... They can go on a rolling wing rack... Or put them on the ceiling...out of the way.

This is another wing storage option, especially for those that find themselves working on their plane more than watching TV.
I am building a Jodel Dr251 (250). All my woodwork is now complete but I started with the empennage. Rudder and tailplane are like mini wings, a good place to start and make sure you want to do this. The Jodel wing is one piece and huge with a challenging spar but certainly can be done, many have. Have fun building
