This months EAA chapter video featured a clip on the father of ultra lights. In the clip he has some type of mouth piece. What is it for?

In the earliest foot launched ultralights they used a mouth held engine kill switch. If anything bad happened, the pilot just spit out the switch and the engine would stop.

Not to take anything away from John Moody, but why isn't Homer Kolb considered the "father of ultralights?"
In 1970, he was flying an original design airplane that fully met what later was defined by the FAA to be an ultralight.
